Open the coconut by drilling the softer hole; one of the three holes is easily punctured with a pointy straw or with a knife. Pour the water into a pitcher and add ice. You could also add a cup of sugar and about 5 lemons for flavor.
Add gin and ice to coconut water. Very refreshing in hot weather.
Mix the eggs with sugar then incorporate the shredded coconut, and mix again. Put the dough into a pastry bag with two handles or spoons. Small pieces are left on a greased tray, or put into capsules. Put them into a preheated oven at 400 º F, heat up for 5 minutes or until browned.
